I love making a beautiful rib roast over the holidays for my family. Every year, one of my favorite things to do is to figure out what to do with prime rib leftovers - my family always tries something new!

But of course, I have a few staple favorite recipes for leftover prime rib. It's a cut of beef that suits so many different dishes: you can add it to everything from pasta to sandwiches, stir-fries, and casseroles.

What to do with Leftover Prime Rib

My creamy penne pasta is one of my favorite ways to use up holiday leftovers. It's ready in less than 30 minutes and beyond flavorful.

It’s like Applebee’s creamy penne pasta with sliced prime rib, but better, complete with cremini mushrooms, sun-dried tomatoes, and a creamy pasta sauce.

My family loves this recipe so much that it is a regular at our table. Although we love it made with prime rib, it is also a perfect solution for leftover steak, smoked brisket, beef tenderloin, and basically any leftover beef you may have.

I have been known to buy extra beef just so I could make this favorite creamy pasta with the leftovers. I know you're going to love my prime rib leftover pasta recipe as much as my family and I do!

Leftover Prime Rib Pasta Recipe Ingredients

  • leftover prime rib
  • olive oil
  • butter
  • heavy cream
  • penne pasta
  • onion, finely chopped
  • garlic cloves, minced
  • mushrooms, sliced
  • sun-dried tomatoes, chopped
  • sea salt and pepper, to taste
  • fresh parsley, to taste
  • grated parmesan, optional

How to Make Leftover Prime Rib Pasta

  1. Heat olive oil in a skillet. Add onion and cook until translucent, then add garlic and cook for another minute.
  2. Add sliced mushrooms and butter and cook until tender, 5-6 minutes, constantly stirring.
  3. Add heavy cream, lowering the heat. Let it simmer for 5 minutes until the sauce reduces.
  4. Mix in sun-dried tomatoes, salt and pepper, and parsley to taste. Stir to incorporate everything, then remove the skillet from the heat.
  5. Slice leftover prime rib into thin slices.
  6. In the meantime, cook penne pasta in a large pot of boiling, salted water. Remove pasta from the heat about 2 minutes before the time indicated on the box, so the pasta is slightly underdone.
  7. Drain in a colander and immediately add to the skillet with the cream sauce.
  8. Finally, add the sliced prime rib and return to the heat, stirring for 1 minute to mix everything. Serve and enjoy!

It turned out wonderful. We had prime rib again this new year. will make this tomorrow. I also make my own sun dried tomatoes.!!

  • ¾ lb leftover prime rib
  • 2 Tablespoons olive oil
  • 2 Tablespoon butter
  • 1 cup heavy cream
  • 1 lb. penne pasta or pasta of your choice
  • ½ onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb. cremini mushrooms, sliced or mushrooms of your choice
  • 1 cup sun-dried tomatoes, chopped
  • sea salt and pepper, to taste
  • fresh parsley, optional
  • grated parmesan, optional

Instructions

    Well well, I had picked up some brisket on sale and it was in the freezer for a while. Thought OK let’s get it out and cook it up but what do I do with brisket. It was a pound of sliced smoked brisket.

    I found this recipe that said use this recipe if you have brisket as if it were prime rib. So I did follow the recipe pretty much exact except for the fact my husband is somewhat lactose intolerant. So heavy cream wouldn’t work for him I did get half-and-half and use that and put some cornstarch to thicken it up which was excellent.

    We just had it for dinner and we had to have seconds but for us it’s plenty for at least six or seven people.

    Thank you for the recipe I will definitely keep the sauce recipe in my file

      Hi Brian! I haven't tried freezing this one because of the heavy cream, and I personally wouldn't recommend it. Creamy pasta sauces like this rarely hold up well in the freezer.
